
One of our favorite meals as a couple used to be a Tomato Spinach and Feta Linguine with Garlic Shrimp. That was before 3 kids. And while we still do love that meal and fix it on occasion, nowadays we often go for meals that are a little easier. Because…well…we’re tired! You understand about being tired right? So today we offer up our Super Simple Spicy Garlic Shrimp as a go to option for when you still want a special meal, but you know you don’t have the energy to execute anything that’s very involved.
The only part of this part of this recipe that requires a little effort is peeling and deveining the shrimp. But most places will do the deveining for you and we think that’s highly preferable. But, if you are doing the work yourself and you need to brush up on your technique then here’s a quick tutorial video on how to peel and devein shrimp.
Once your shrimp is prepped you’ll need your garlic. Make sure you’re familiar with this trick for peeling garlic and preserving garlic. Love that garlic peeling hack! It saves times and prevents your hands from smelling like garlic. Okay, I love garlic so that might be less offensive to me than some, but it’s still a cool technique.
We like our garlic shrimp spicy! If you’re a spice fan too then feel free to be as heavy handed as you like with the red pepper flakes. But for those less bold (boo!) find what level of spice works for you. Since we go heavy on the spice we find that these spicy garlic shrimp pair really well with our coconut rum strawberry daiquiris. Could it be that we are heavy handed with the spices just so we have an excuse to fix strawberry daiquiris? Maybe. 😉
So there you have it: the grown-ups still get to have date night shrimp without having to expend a lot of energy fixing anything too involved. Yes, this garlic shrimp also makes a great appetizer if you still have energy to fix something else. That’s awesome if you do, but today’s post was inspired by those nights when you ABSOLUTELY DON’T! You know what I’m talking about.
Cheers and on to the recipe:

Ingredients
- 2 lbs . peeled , deveined shrimp
- 2 cloves garlic
- 2 T . olive oil
- 1/2 tsp . pepper flakes
- salt and pepper to taste
Instructions
- Heat the oil in 2 pans (or one batch at a time--don't crowd the shrimp because it will cause it to steam rather than sautee).
- Add pepper flakes for 30 seconds.
- Add shrimp. Cook for 2-3 minutes per side.
- Near the end of the cooking period for the shrimp, add garlic to the pan.
- Once shrimp is done, stir with garlic briefly and remove from pan.
- Give yourself a high five and enjoy!
