On the menu today we have a Shredded Carrot and English Garden Pea Salad. What you’re not familiar with English Garden Peas? Okay, but I know you appreciate fresh ingredients and healthy eating, right? So…all we are saying is give peas a chance! You see what I did there? There is no limit to the number of bad jokes in my aresnal! But certainly we can all get behind healthy meal options. And we all love it when we don’t have to slave away for hours in the kitchen. We’ve got you covered so read on.

The Power of Salads

Salads. Must eat more salads. As the seasons change so to does our diet. This becomes our mantra this time of year. Hot soups are great in the Fall and Winter, but as we head into Summer it’s all about salad. Once the weather turns hot you don’t always want to be spending lots of time in the kitchen over the hot stove. Salads can provide a number of fresh, healthy, simple meals that can form the foundation of your diet. We’re putting salads to work for us, perhaps it’s time you also put the power of salads to work for you. Furthermore, simple is important in the busy parenting lifestyle. And healthy should always enter into the equation. We don’t claim to always eat healthy, but we certainly try to do it more often than not. Parenting and life in general takes a lot of energy and so it’s important that we fuel our bodies in the correct way. This is also something we want to teach our kids.

As we talked about recently, this year we have been having a lot of success with our garden. That makes it easy to grab a lot of fresh ingredients and use them as the inspiration for a new salad. And you don’t get any fresher than from your own garden! When we need to supplement we love to visit all of the great local farmer’s market. Supporting locally grown fresh ingredient is something that’s important to us.

This salad is easy to prepare as are most. Choose the lettuce or varieties of lettuce of your choice. Shell some great peas (or buy them pre-shelled): we used English Garden Peas. Shave some carrots on top for a little more vegetable power and some added vibrance. Then top with any other toppings you like along with a great dressing. We used our Honey Miso Sesame Ginger dressing and the result was great. This shredded carrot english garden pea salad topped with our ginger dressing is definitely something we will add to our list of easy recipes we can execute on nights when we just don’t have the energy to fix a more involved meal. And it also checks off the healthy box so it’s not a bad meal to turn to when you are coming down from pizza night the night before.

Shredded Carrot English Garden Pea Salad

Ingredients

  • 1 head lettuce
  • 1-2 shaved carrots
  • 1/2 c . shelled english garden peas
  • 1 c . ginger miso dressing

Instructions

  • Wash and break up lettuce. Spread lettuce on plate.
  • Shell and wash peas. Add to plate.
  • Wash carrot(s). Shave onto salad.
  • Serve with you favorite dressing.

    Oh, I love peas, but never actually had them in a salad. This is definitely worth a try, maybe today for lunch, I have everything I need at home. Well, frozen peas, to tell you the truth, I haven’t seen fresh peas in a pod since I was a kid.

      Nice Adina. Fresh is the best, of course, but frozen peas hold their texture and nutritional content better than canned peas. Frozen peas are actually one of our go to items for our kids. Gotta eat those veggies!
