There are few things in the food world I love more than buffalo wings and pizza of all kinds: basil pesto pizza, greek pizza, grilled tomato and basil pizza, spinach and feta pizza. We love it all! Naturally, I love buffalo pizza or “chicken wing pizza”. There is a local pizza place that makes the absolute best buffalo chicken pizza I have ever tasted. It is out of this world. I mean it’s sinfully good. Dangerously good. My stomach hurts and I shouldn’t have eaten that much good. I might get really fat good. I need to figure out how to make this myself good. Today we’ll share with you our first attempt at doing just that. Our version is not quite all the way there yet, but we will hopefully continue to update this recipe for buffalo pizza over the year as we make the needed tweaks and move it closer towards the perfect pizza.

Before digging in, an important disclosure .
Obvious keys to anything buffalo wing related are the buffalo sauce and blue cheese. If anyone tries to sell you on ranch dressing with your buffalo wings leave immediately. Seriously, run . Get out of there! Ranch dressing with buffalo wings? Blasphemy! No respectable wing-eater goes for anything other than blue cheese. 🙂

We love it and it’s perfect for buffalo wing pizza. I’d slather the whole jar on there if calories and consequences didn’t exist.

Homemade Buffalo Sauce Ingredients
Now, for the buffalo sauce we have a secret trick…a hot sauce we love and have eaten for year and years, Franks Red Hot Sauce. And if you blend it with butter you have a great buffalo sauce. A blend of close to equal parts butter and Franks Red Hot works well, although we tend to go with slightly more of the Franks Red Hot Sauce. But it really just depends on your taste. Adjust accordingly. That’s it, just butter and Franks Red Hot Sauce. Expecting something more complicated? Sorry to disappoint you. 🙂
Another key component of the buffalo wing pizza from the local restaurant that I love so much are red onions. They add the perfect crunch element and really add in a great flavor. We really find them to be perfect on a buffalo pizza.
The one component of the pizza that we haven’t quite nailed yet is the chicken. At the restaurant they have breaded buffalo chicken bites smothered in buffalo sauce. For our pizza we just grilled some chicken and then rolled it around in buffalo sauce before adding it to the pizza. It’s certainly good, but we may look into using breaded chicken in the future. Without the breading you save a little on calories, but it’s not quite the same in terms of taste.
The ingredients for our recipe for buffalo chicken pizza get rounded out with some good old-fashioned mozzarella to top things off. Can’t go wrong there.
The full buffalo pizza details:

Ingredients
- 2 tablespoons blue cheese dressing (store bought if you prefer)
- 1 cup cubed grilled chicken breast
- 2 tablespoons butter
- 3 tablespoons franks red hot sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped red onion
- pizza dough (store bought if you prefer)
Instructions
- Make the crust ahead of time (or buy your favorite store bought dough).
- Preheat oven and pizza stone to 475 degrees F.
- Roll out the dough and transfer to preheated stone.
- Melt the butter.
- Mix the butter and the Franks Red Hot to make your buffalo sauce.
- Spread 2/3 of the buffalo sauce over the crust.
- Spread the blue cheese dressing over the crust.
- Add the chicken.
- Add the red onion.
- Top with mozzarella.
- Bake for 12-14 minutes.
- Remove from oven and add the remaining buffalo sauce.
