We love frittata and Easy Kale Frittata with sun-dried tomatoes is a favorite breakfast recipe in our house. It’s super easy and it’s a great way to start your day with a nice serving of vegetables and protein. Breakfast is such an important part of starting the day right so read on and consider adding a frittata with veggies to your regular morning routine.

What is Fritatta?
Frittata is an egg-based Italian-style dish similar to an omelette, but different from an omelette in that you mix in a filling rather than folding it in. You can add whatever you like, but we’re a big fan of adding in lots of fresh vegetables and a little bit of cheese and shallots. We really find shallots to be a star ingredient in things like omelettes, frittatas, and other breakfast dishes.
I think a lot of recipes include instructions on how to make a frittata solely in a skillet on your stovetop, but one little trick we’ve picked up is finishing the frittata in the oven. And we actually do this a little different than most folks by finishing it under the broiler. We find it works perfectly especially if you really like that slight browning on the top.
So when you’re looking for a breakfast that’s loaded with fresh vegetables and flavor, look no further than a veggie-filled frittata. You can prep and make ahead and then you have an easy breakfast to pull out during the week. Make more than one! Enjoy the leftovers!
And it’s a great way to get your kids to eat things like Kale! Sometimes when you put vegetables and food items like this alone on the plate your child can experience anxiety and they really don’t want to even try them. But if you just creatively work them into foods they already like then you’ll be surprised at what your kids end up eating. Include your kids in the process and get them to help in the kitchen. They’ll be more apt to try something they’ve helped to create and then once you have a starting point they enjoy, you can slowly introduce change and expand the variety of foods that they are eating.
Here’s our recipe for Kale and Sun-Dried Tomato Frittata:

Ingredients
- 1 T . oil
- 1 shallot or 1 T. red onion , chopped fine
- 1 c . kale , chopped fine
- 2 T . sundried tomato , chopped
- salt and pepper
- 4 eggs
Instructions
- Heat oil in pan.
- Add shallot or onion and saute 2-3 minutes.
- Add kale and saute 3 minutes.
- Add tomato, season with salt and pepper, and saute an additional 3 minutes.
- Remove pan from heat to cool for several minutes.
- Whisk eggs and season with salt and pepper.
- Add eggs to slightly cooled pan with sauteed vegetables.
- Cook for 4-5 minutes on low until egg is set except for a little on the top.
- Broil for 3-4 minutes until cooked on top.
