  • 3 lb ground turkey
  • 3 tsp chili powder divided
  • 3 tsp cumin divided
  • 1-2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cayenne pepper
  • 1 onion chopped
  • 2 jalapenos diced
  • 2 cloves garlic minced
  • 2 red or green bell peppers chopped
  • 1 zucchini diced
  • 2 sweet potatoes diced
  • 3 oz tomato paste
  • 1/2 cup broth
  • 15 oz petite diced tomatoes

  • Brown the turkey in two batches.  Brown in a large saucepan until mostly cooked.  Drain, sprinkle one teaspoon, cumin, and chili powder, and cook for an additional 2 minutes.  Add to slow cooker and cook second batch with the same directions.
  • Cook onions in the same pan after the turkey is done for 4-6 minutes.  Add jalapeno and garlic and cook for an additional 1 minute.  Add bell peppers and cook for 2 minutes.  Remove from heat and add to slow cooker.
  • Add tomato paste, broth, petite diced tomatoes, cayenne pepper, zucchini, and sweet potato and remaining teaspoon of cumin, salt, and chili powder to the slow cooker.
  • Stir ingredients.  Cook on high for 3-4 hours, or low for 4-6 hours.
