Roasted Tomatillo Salsa Verde
Salsa verde made with roasted tomatillos, poblano and jalapeno peppers, garlic, and onion.
- 24 tomatillos halved (about 4 cups)
- 2 poblano peppers
- 1 jalapeno pepper
- 1/4 white onion
- 1 clove garlic
- 1/4 cup cilantro
- 1/2 lime juice
- 1/2 tsp salt
Arrange tomatillos, peppers, white onion, and garlic on a foil lined tray.
Broil for 8-10 minutes until the skin has darkened on all the items on the tray.
Remove tray from oven and let cool slightly.
Place items from tray in a food processor with remaining ingredients and pulse until blended to desired consistency.
Serve with chips, tacos, scrambled eggs, etc.
