Roasted Tomatillo Salsa Verde

Salsa verde made with roasted tomatillos, poblano and jalapeno peppers, garlic, and onion.

  • 24 tomatillos halved (about 4 cups)
  • 2 poblano peppers
  • 1 jalapeno pepper
  • 1/4 white onion
  • 1 clove garlic
  • 1/4 cup cilantro
  • 1/2 lime juice
  • 1/2 tsp salt


  • Arrange tomatillos, peppers, white onion, and garlic on a foil lined tray.
  • Broil for 8-10 minutes until the skin has darkened on all the items on the tray.  
  • Remove tray from oven and let cool slightly.
  • Place items from tray in a food processor with remaining ingredients and pulse until blended to desired consistency.
  • Serve with chips, tacos, scrambled eggs, etc.
