Easy Ice Cream Pie with Graham Cracker Crust

Servings 10 serving


  • 18 graham crackers (2 of the 3 packages in the box)
  • 9 Tbsp . butter
  • 1/2 c . brown sugar
  • 1/2 tsp . salt
  • Vanilla ice cream
  • Strawberries
  • Homemade dark chocolate hot fudge


  • Set ice cream on counter for an hour to soften.
  • Break crackers up into a large ziploc bag and crush with a rolling pin.
  • Pour into bowl and mix with brown sugar and salt.
  • Melt butter and add to graham cracker crumb mixture.
  • Stir until combined.
  • Pour half of mixture into 8x8 pan and press down.
  • Mix the rest of the mixture in with softened ice cream.
  • Pour on top of pressed down mix in pan. Spread out and freeze.
  • Take out 15 minutes before you will be eating.
  • Cut and place on plates.
  • Top with fresh strawberries and homemade dark chocolate hot fudge.


You could of course do this without the addition of strawberries and hot fudge, but those make nice additions if you're really going all out.
