Heat oil in pan.
Add shallot or onion and saute 2-3 minutes.
Add kale and saute 3 minutes.
Add tomato, season with salt and pepper, and saute an additional 3 minutes.
Remove pan from heat to cool for several minutes.
Whisk eggs and season with salt and pepper.
Add eggs to slightly cooled pan with sauteed vegetables.
Cook for 4-5 minutes on low until egg is set except for a little on the top.
Broil for 3-4 minutes until cooked on top.
