Soy Ginger Pork Tenderloin

  • 2 boneless pork tenderloins , each 1-1 1/2 lbs.
  • 2/3 cup soy sauce
  • 1/3 cup candied or fresh ginger
  • 2/3 cup brown sugar
  • 1 Tablespoon corn starch
  • 2 Tablespoons vinegar
  • 1 tsp ground ginger
  • 3 cloves garlic


  • Put all ingredients except pork in blender and blend thoroughly.
  • Reserve about 1/2 of liquid mixture.
  • Marinate the pork in a large ziploc bag with the remaining liquid (I usually try to do this overnight and turn several times).
  • Preheat oven to 425 F.
  • Place pork in a baking pan lined with foil and sprayed with oil and pour marinade over top.
  • Bake for 30-40 minutes or until meat thermometer reads 140-145 F, turning pork over once half way through cooking.
  • Let meat rest for 10 minutes before cutting.
  • Heat reserved marinade over low heat until thickens and serve with pork.
