Honey Glazed Baked Salmon and Mango Salad

  • 4 six ounce salmon portions
  • 2/3 cup fresh squeezed lime juice (5-6 limes)
  • 1/2 cup honey
  • 1 teaspoon fresh grated ginger
  • salt
  • mixed salad greens
  • 1-2 ripe mangoes , sliced and peeled


  • Preheat oven to 375.
  • Whisk together lime juice, honey and ginger.
  • Place salmon in a foil lined pan.
  • Drizzle about 1/4 to 1/3 of lime honey ginger mixture over top.
  • Season slightly with salt.
  • Cook for approximately 10-12 minutes, then broil until brown on top.
  • Divide greens onto four plates.
  • Top with mango and salmon, then drizzle with remaining honey lime ginger mixture.
