Ingredients

Cake Ingredients

  • 1 yellow cake mix
  • 15 oz pumpkin puree
  • 1 tsp vanilla
  • 1/2 tsp pumpkin spice

Topping Ingredients

  • 1 cup oats
  • 1 1/2 cup flour
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin spice
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 3/4 cup butter

Instructions

  1. Preheat oven to 350.

  2. Mix cake mix, pumpkin puree, 1 tsp vanilla, and 1/2 tsp pumpkin spice and pour into greased 13x9 inch pan.

  3. Bake for 20 minutes.

  4. While cake is baking, mix crumb topping ingredients in a food processor until they started to clump together (you don't want a powdery mixture).

  5. Remove cake from oven and sprinkle crumb topping over the top.

  6. Return to oven for 20 additional minutes.

  7. Sprinkle with powdered sugar and serve.
