Ingredients

Cake Ingredients

  • 1 yellow cake mix
  • 15 oz pumpkin puree
  • 1 tsp vanilla
  • 1/2 tsp pumpkin spice

Topping Ingredients

  • 1 cup oats
  • 1 1/2 cup flour
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin spice
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 3/4 cup butter

Instructions

  • Preheat oven to 350.
  • Mix cake mix, pumpkin puree, 1 tsp vanilla, and 1/2 tsp pumpkin spice and pour into greased 13x9 inch pan.
  • Bake for 20 minutes.
  • While cake is baking, mix crumb topping ingredients in a food processor until they started to clump together (you don't want a powdery mixture).
  • Remove cake from oven and sprinkle crumb topping over the top.
  • Return to oven for 20 additional minutes.
  • Sprinkle with powdered sugar and serve.
