Spinach Fontina Omelette

Ingredients

  • 1/2 T . coconut or extra virgin olive oil
  • 1 shallot , diced
  • 1 c . spinach , chopped roughly
  • 1/4 c . tomato , chopped
  • 3 eggs , beaten
  • salt and pepper
  • 1/8 c . fontina cheese

Instructions

  1. Heat oil in pan over medium heat.
  2. Add shallot and saute 2-3 minutes.
  3. Add spinach and cook until wilted 2-3 minutes.
  4. Season with salt and pepper.
  5. Add tomato and cook another 2 minutes.
  6. Scrape vegetable mixture onto a plate.
  7. Place the pan back on low heat.
  8. Thoroughly whisk eggs with salt and pepper.
  9. Pour eggs into pan.
  10. Cook until mostly cooked through approximately 4 minutes.
  11. Broil top of omelette for 1-2 minutes.
  12. Remove from broiler.
  13. Top half of the egg with cheese and vegetables.
  14. Fold in half.
  15. Serve.
