Crunchy Chicken Casserole

Ingredients

  • 4 c . diced , cooked chicken
  • 6-8 carrots , peeled chopped
  • 1 4 oz . jar diced pimentos
  • 1/4 c . butter
  • 1/4 c . flour
  • 2 c . chicken broth
  • 8 oz . shredded sharp cheddar cheese

For the topping

  • 1/4 c . butter
  • 2 cups herb stuffing or bread crumbs

Instructions

  1. Cook the carrots.
  2. Melt butter in a pot over medium low heat.
  3. Add flour to butter and stir.
  4. Slowly add a little broth at a time, stirring constantly, until all broth added and thicken.
  5. Lower heat, add cheese and stir until melted.
  6. Remove from heat.
  7. Add cooked chicken, cooked carrots, and pimentos.
  8. Pour mixture into a greased 13x9 or casserole pan.
  9. Add 1/4 c. butter to a pan and melt.
  10. Add stuffing mix and stir.
  11. Spread over top of chicken mixture.
  12. Cook for 30-40 minutes at 375.
