Grilled Corn Salad with Basil Vinaigrette

Ingredients

  • Lettuce , 1 large head
  • 8-12 cherry tomatoes
  • 1 ear of grilled corn , sliced off the cobb

Basil Vinaigrette Dressing

  • 1/2 c . olive oil
  • 1/3 c . balsamic vinegar
  • 1 garlic clove
  • 1 c . basil
  • salt
  • pepper

Instructions

  • Place all basil vinaigrette ingredients in blender and blend on low briefly. Scrape down sides and blend until mixed.
  • Wash lettuce and tomatoes
  • Slice the corn off the cobb
  • Plate and dress to your liking.
