Spicy Sauteed Shrimp and Feta Zoodles

Ingredients

  • 4 medium zucchinis
  • 4 oz . spinach , roughly chopped
  • 6 oz . feta , chopped
  • 2 lb . Spicy shrimp (see recipe)
  • 1 pint of cherry tomatoes , cut in half
  • 1/2 c . white wine
  • salt and pepper

Instructions

  • Preheat oven to 375.
  • Spray a 13x9 inch pan with your preferred oil (we found a grapeseed oil spray we like).
  • Add spinach to pan and sprinkle feta on top.
  • Cook spicy shrimp according to our instructions and place on top of spinach/feta.
  • Deglaze the pan with white wine and add tomatoes.
  • Simmer for 5 minutes.
  • Pour on top of shrimp.
  • Cook for 15-20 minutes.
  • After about the first 10 minutes, stir and mash feta while stirring--this makes a thicker feta wine sauce and really adds to the dish.
