Vegan Cilantro Quinoa Taco Bowls

Ingredients

Cilantro Quinoa:

  • 1 1/2 c . quinoa
  • 3 c . water
  • juice from 1 lime
  • 1 T . oil
  • 1 tsp . cumin
  • 1/2 tsp . garlic powder
  • salt and pepper
  • 1-3 T . fresh cilantro

For the Taco Bowls:

  • black beans
  • grilled jalapenos
  • avocado or guacamole
  • chopped tomato or salsa
  • chopped lettuce
  • lime wedges

Instructions

  • Put all cilantro quinoa ingredients except cilantro in rice cooker.
  • Cook on white rice setting.
  • Once cooked, mix in cilantro.
  • Use immediately or store in fridge for up to a week.
  • For taco bowls, top the cilantro quinoa with your favorite taco/burrito toppings.
