Sun dried tomato kale frittata

Ingredients

  • 1 T . oil
  • 1 shallot or 1 T. red onion , chopped fine
  • 1 c . kale , chopped fine
  • 2 T . sundried tomato , chopped
  • salt and pepper
  • 4 eggs

Instructions

  • Heat oil in pan.
  • Add shallot or onion and saute 2-3 minutes.
  • Add kale and saute 3 minutes.
  • Add tomato, season with salt and pepper, and saute an additional 3 minutes.
  • Remove pan from heat to cool for several minutes.
  • Whisk eggs and season with salt and pepper.
  • Add eggs to slightly cooled pan with sauteed vegetables.
  • Cook for 4-5 minutes on low until egg is set except for a little on the top.
  • Broil for 3-4 minutes until cooked on top.
