No Bake Cranberry White Chocolate Bites

- 1 cup quick oats
- 1 cup cashews
- 1/3 cup dried cranberries
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 2 Tbsp maple syrup
- 2-3 Tbsp coconut oil melted
- 1/2 oz shaved white chocolate
Process oats and cashews in the food processor until cashews are small bits.
Add cranberries and process until desired size.
Add remaining ingredients and process until everything starts clumping together.
If mixture does not stick together when scooped with a tablespoon, add additional syrup or oil a half tablespoon at a time.
Scoop mixture into a tablespoon and pack down.
Roll into ball shapes.
