Chocolate Peanut Butter No Bake Cookies

Desserts are magical when you’re a kid. And, let’s be honest, when you’re a grown-up too! But, sadly, constantly eating sugar and butter-laden desserts is not the best thing for your health. Bummer. We’ve all experienced that post dessert sugar coma. Or we’ve watched our kids ride the sugar high only to quickly crash; They bounce off the walls in crazy mode for a little while, but then the grumpies quickly start to surface. That’s why we learned how to make no bake cookies!  We are always in search of quick and easy healthy desserts for our kids. Okay, and for us as well. Because we LOVE dessert, but we also care about our health. Today we’ll show you our recipe for Chocolate Peanut Butter No Bake Cookies.

We love healthy no bake cookies and healthy no-bake desserts for the following reasons:

Less work! We like to call them “easy no bake cookies” because most no bake cookie recipes that we have found really are simple. You mix up the ingredients. You’re done! I like that. Especially in the summer when I really don’t like the oven heating up the house.

It’s super easy to use fresh wholesome ingredients. I love making chocolate chip cookies following the recipe right off the tollhouse bag (sometimes we throw in a few twists and make pan cookies), but when you stare down at that bowl full of sugar and butter you know that you’re not making a healthy dessert. Some no-bake desserts might fall into the same trap, but lots don’t! We like recipes that contain a lot of all-natural healthy ingredients.

They still taste great. Whenever you are checking out a recipe for no bake cookies I’m sure one of the biggest things you’re thinking is “Yes, but do they taste good?”. We’re with ya! What’s the point of dessert, if you don’t enjoy it? And we’re not saying there aren’t some clunkers out there, but we’ve had great success finding no bake recipes that we really enjoy. So today we’re going to show you one of our recent creations, no-bake chocolate peanut butter cookies. They only have 7 ingredients and you can have them made  in about 10 minutes. And with ingredients like oats and almond milk you’re coming in healthier than a lot of other desserts. Sounds like a winner, am I right?

Enough talk, here’s the recipe:

 

No Bake Chocolate Peanut Butter Balls

Total Time: 10 minutes
Servings: 12 -15 balls

Ingredients

  • 1 c . quick oats
  • 1/2 c . peanut butter
  • 2 tsp . vanilla
  • 1/8 c . maple syrup
  • 1/4 c . cacao
  • 1/2 tsp . salt
  • 2-3 T . almond milk

Instructions

  • Mix all ingredients except almond milk in food processor (oats on bottom).
  • Add almond milk 1 tablespoon at a time until mixture easily forms balls and sticks together.
  • Roll into balls (using approximately 1 T. in each) and refrigerate.
